UMAMI travels across the oceans. In contrast to certain things which become obsolete and, as a consequence, disappear, a «Dashi» culture has been transmitted from generation to generation by the Japanese people. Even though Dashi can be regarded as an everyday ordinary food, it brings to light the delicate flavours which represent the spirit of Japan. In our quest for a genuine Dashi, we cross the oceans, transcending cultures, to land in Brittany, France in order to produce the traditional ingredient that is «Katsuobushi».
